Slow Cooker Pepper Steak

This Slow Cooker Pepper Steak is a classic comfort meal—tender strips of beef simmered slowly with bell peppers in a rich, savory sauce. It’s easy to prepare, full of flavor, and perfect for busy days when you want dinner ready and waiting.

Ingredients

  • 1½ lb (700 g) beef sirloin or flank steak, sliced into thin strips
  • 2 tbsp vegetable oil
  • 1 medium onion, sliced
  • 2 bell peppers (red and green), sliced
  • 3 cloves garlic, minced
  • ¾ cup beef broth
  • ¼ cup soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp ground ginger (or fresh, minced)
  • ½ tsp black pepper
  • 2 tbsp cornstarch + 2 tbsp water

Instructions

  1. Prepare the beef
    Season the sliced beef lightly with black pepper. Heat oil in a skillet over medium-high heat and quickly sear the beef strips for 1–2 minutes per side to lock in flavor. Transfer to the slow cooker.
  2. Add vegetables
    Place the sliced onion, bell peppers, and minced garlic over the beef in the slow cooker.
  3. Make the sauce
    In a bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, brown sugar, and ginger. Pour the sauce over the beef and vegetables.
  4. Slow cook
    Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is tender.
  5. Thicken the sauce
    About 20 minutes before serving, stir in the cornstarch slurry. Cover and continue cooking until the sauce thickens.
  6. Serve
    Stir well and serve hot over steamed rice or noodles.

✨ Tip: For extra color and crunch, add an extra bell pepper during the last hour of cooking.
