Carolina Chicken Salad

This Carolina Chicken Salad is a Southern classic—simple, fresh, and full of comforting flavor. Made with tender chicken, crunchy celery, and a lightly sweet-and-savory dressing, it’s perfect for sandwiches, croissants, crackers, or served over crisp lettuce.

Ingredients

  • 3 cups cooked chicken, finely chopped or shredded
  • ½ cup mayonnaise
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp sugar or honey
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup celery, finely diced
  • ¼ cup sweet pickle relish
  • 2 tbsp finely chopped onion or green onion

Instructions

  1. Prepare the chicken
Make sure the cooked chicken is fully cooled, then chop or shred it into small, bite-sized pieces for the best texture.
  2. Make the dressing
In a large bowl, whisk together the mayonnaise, yellow mustard, apple cider vinegar, sugar (or honey), salt, and black pepper until smooth and well combined.
  3. Combine the salad
Add the chicken, diced celery, sweet pickle relish, and onion to the bowl. Gently stir until everything is evenly coated with the dressing.
  4. Chill for flavor
Cover and refrigerate for at least 30 minutes to allow the flavors to blend and deepen.
  5. Serve
Stir once more before serving. Enjoy on sandwiches, with crackers, or over fresh greens.

✨ Tip: For a true Carolina touch, serve on soft white bread or buttery croissants with a side of pickles.
