Sweet Mexican Pancakes

These Sweet Mexican Pancakes are light, fluffy, and gently spiced, inspired by traditional Mexican flavors. Perfect for breakfast or brunch, they’re delicious served warm with syrup, fruit, or a sprinkle of cinnamon sugar for a comforting homemade treat.

Ingredients

  • 1½ cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1¼ cups milk
  • 1 large egg
  • 2 tbsp melted butter or vegetable oil
  • 1 tsp vanilla extract
  • Butter or oil, for cooking

Instructions

  1. Mix the dry ingredients
    In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until evenly combined. This helps distribute the leavening and spices for even flavor.
  2. Combine the wet ingredients
    In a separate bowl, whisk the milk, egg, melted butter (or oil), and vanilla extract until smooth.
  3. Make the batter
    Pour the wet ingredients into the dry ingredients. Gently whisk just until combined. The batter should be slightly lumpy—overmixing can make the pancakes dense.
  4. Heat the pan
    Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. When the surface is hot, pour about ¼ cup of batter per pancake onto the pan.
  5. Cook the pancakes
    Cook for 2–3 minutes, until bubbles form on the surface and the edges look set. Flip and cook another 1–2 minutes until golden brown and cooked through.
  6. Serve warm
    Transfer to a plate and serve immediately with maple syrup, honey, fresh fruit, or a dusting of powdered sugar and cinnamon.
