These Sweet Mexican Pancakes are light, fluffy, and gently spiced, inspired by traditional Mexican flavors. Perfect for breakfast or brunch, theyāre delicious served warm with syrup, fruit, or a sprinkle of cinnamon sugar for a comforting homemade treat.
Ingredients
- 1½ cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp ground cinnamon
- ¼ tsp salt
- 1¼ cups milk
- 1 large egg
- 2 tbsp melted butter or vegetable oil
- 1 tsp vanilla extract
- Butter or oil, for cooking
Instructions
- Mix the dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until evenly combined. This helps distribute the leavening and spices for even flavor. - Combine the wet ingredients
In a separate bowl, whisk the milk, egg, melted butter (or oil), and vanilla extract until smooth. - Make the batter
Pour the wet ingredients into the dry ingredients. Gently whisk just until combined. The batter should be slightly lumpyāovermixing can make the pancakes dense. - Heat the pan
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. When the surface is hot, pour about ¼ cup of batter per pancake onto the pan. - Cook the pancakes
Cook for 2ā3 minutes, until bubbles form on the surface and the edges look set. Flip and cook another 1ā2 minutes until golden brown and cooked through. - Serve warm
Transfer to a plate and serve immediately with maple syrup, honey, fresh fruit, or a dusting of powdered sugar and cinnamon.
⨠Tip: For a more authentic touch, add a pinch of orange zest or serve with dulce de leche or sweetened condensed milk on the side.
