Easy Sausage Muffins

These easy sausage muffins are savory, hearty, and perfect for busy mornings. Made with simple ingredients, they bake up fluffy on the inside with plenty of cheesy, sausage-filled flavor. They are great for meal prep, grab-and-go breakfasts, or brunch gatherings.

Ingredients

Breakfast sausage 1 pound
All-purpose flour 2 cups
Baking powder 1 tablespoon
Salt 1/2 teaspoon
Black pepper 1/4 teaspoon
Garlic powder 1/2 teaspoon
Shredded cheddar cheese 2 cups
Large eggs 2
Whole milk 1 cup

Instructions

Step 1: Preheat and prepare
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners to prevent sticking.

Step 2: Cook the sausage
Place the sausage in a skillet over medium heat. Cook, breaking it apart with a spoon, until fully browned and no longer pink. Drain excess grease and set aside to cool slightly.

Step 3: Mix dry ingredients
In a large bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder until evenly combined.

Step 4: Add cheese and sausage
Stir the shredded cheddar cheese into the dry ingredients, then add the cooked sausage. Mixing them with the flour helps keep the sausage evenly distributed in the muffins.

Step 5: Combine wet ingredients
In a separate bowl, whisk the eggs and milk together until smooth.

Step 6: Make the batter
Pour the egg and milk mixture into the dry ingredients. Stir gently until just combined. Do not overmix; the batter should be thick and slightly lumpy.

Step 7: Fill muffin cups
Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Step 8: Bake
Bake for 20 to 25 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Step 9: Cool and serve
Let the muffins cool in the pan for about 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
