Bacon Brown Sugar Pork

This sweet-and-savory pork dish features juicy pork wrapped in crispy bacon and coated with caramelized brown sugar. It’s an easy crowd-pleaser that works just as well for weeknight dinners as it does for special occasions.

Ingredients

  • 4 boneless pork chops or pork tenderloin medallions
  • 8 slices bacon
  • 1/2 cup brown sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • Optional: pinch of cayenne pepper for heat

Instructions

1. Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with foil for easy cleanup.

2. Prepare the Pork
Pat the pork dry with paper towels.
Season lightly with garlic powder, paprika, and black pepper.

3. Wrap with Bacon
Wrap each piece of pork with 1–2 slices of bacon, securing with toothpicks if needed.
Place the wrapped pork seam-side down in the baking dish.

4. Add Brown Sugar
Pack brown sugar evenly over the top of each bacon-wrapped pork piece.
Sprinkle with a pinch of cayenne if you like a little heat.

5. Bake
Bake uncovered for 35–45 minutes, or until the bacon is crisp and the pork reaches an internal temperature of 145°F (63°C).
For extra crisp bacon, broil for 2–3 minutes at the end.

6. Rest and Serve
Let rest for 5 minutes before serving.
Serve with mashed potatoes, green beans, or roasted sweet potatoes.
