This one pot lasagna soup delivers all the cozy flavors of classic lasagna in a fraction of the time. Itās hearty, comforting, and perfect for busy nights when you want a filling homemade meal with minimal cleanup.
Ingredients
- 1 pound ground beef or Italian sausage
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or beef broth
- 2 cups water
- 8 lasagna noodles, broken into pieces
- Salt and black pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley or basil for garnish (optional)
Instructions
1. Brown the Meat
Heat olive oil in a large pot over medium heat.
Add the ground beef or sausage and cook until browned, breaking it apart as it cooks.
Drain excess grease if needed.
2. Add Aromatics
Stir in the diced onion and cook for 3ā4 minutes until softened.
Add the minced garlic and cook for 30 seconds until fragrant.
3. Build the Soup Base
Add Italian seasoning, basil, oregano, and red pepper flakes.
Pour in crushed tomatoes, broth, and water.
