This classic pineapple cake is incredibly moist, lightly sweet, and wonderfully simple to make. With just a handful of basic ingredients and no mixer required, itās the perfect dessert for potlucks, family gatherings, holidays, or anytime you want an easy homemade treat.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 can (20 oz) crushed pineapple with the juice
Instructions
Step 1: Preheat
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
Step 2: Mix Ingredients
In a large mixing bowl, add the flour, granulated sugar, eggs, baking soda, vanilla extract, and the entire can of crushed pineapple including all the juice.
Stir the mixture thoroughly with a spatula or wooden spoon until everything is well combined. The batter will be thick, moist, and slightly chunky from the pineapple.
Step 3: Bake
Pour the batter evenly into the prepared baking dish.
Place the dish in the preheated oven and bake for 30 to 35 minutes, or until the top turns golden brown and a toothpick inserted into the center comes out clean.
Step 4: Cool and Serve
Remove the cake from the oven and allow it to cool for at least 10 to 15 minutes before slicing.
Serve the cake plain for a light, fruity finish, or top it with whipped cream, cream cheese frosting, or a dusting of powdered sugar for extra indulgence.
