Pecan Pie Muffins capture all the rich, buttery flavor of classic pecan pie in a soft, tender, handheld muffin. They are incredibly easy to make and perfect for breakfast, brunch, or a sweet snack with coffee.
Ingredients
- 1 cup packed brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 2 large eggs
- 1/2 cup unsalted butter, melted
Instructions
1. Prepare the oven and pan
Preheat the oven to 350°F (175°C). Grease a standard muffin pan or line it with paper liners. These muffins tend to stick, so greasing is important.
2. Mix dry ingredients
In a medium bowl combine the brown sugar, flour, and chopped pecans. Stir well until the pecans are evenly distributed in the mixture.
3. Add wet ingredients
In a separate bowl lightly beat the eggs. Add the melted butter and stir until combined.
Pour the wet mixture into the dry ingredients. Stir just until everything is moistened and a thick batter forms.
4. Fill the muffin cups
Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
5. Bake
Bake for 18 to 22 minutes or until the tops are set and the edges are golden brown. They should be slightly crisp on the outside and soft in the center.
6. Cool and serve
Allow the muffins to cool in the pan for about 10 minutes before removing them. Serve warm or at room temperature.
