Country-Style Ranch Green Beans and Potatoes with Bacon

Ingredients

  • 1 lb fresh green beans, trimmed (or 3 cups frozen)
  • 1 lb baby potatoes, halved (or diced russet potatoes)
  • 6 slices thick-cut bacon, chopped
  • 3 tablespoons butter
  • 1 packet ranch seasoning mix
  • 1 small onion, finely diced (optional but recommended)
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste
  • 1 cup chicken broth

Instructions

1. Cook the Bacon

  • In a large skillet or pot, cook the chopped bacon over medium heat until crispy.
  • Remove the bacon and set aside, leaving the drippings in the pan.

2. Sauté Onion and Garlic

  • Add the diced onion to the bacon drippings and sauté until softened.
  • Stir in the garlic and cook for one more minute.

3. Add Potatoes and Broth

  • Add the potatoes to the pot and pour in the chicken broth.
  • Cover and simmer 10 minutes, or until potatoes begin to soften.

4. Add Green Beans

  • Add the green beans, butter, and ranch seasoning.
  • Stir well to coat everything.

5. Simmer Until Tender

  • Cover again and cook 15–20 minutes, until potatoes and green beans are fork-tender.
  • Season with salt and pepper to taste.

6. Add Bacon and Serve

  • Stir the cooked bacon back into the pot before serving.
  • Serve warm as a comforting side with any main dish.
