This Pineapple Delight Dessert is a cool, creamy, no-bake treat with a buttery graham cracker crust, a light cream cheese layer, and a sweet pineapple topping. It’s simple to make and perfect for gatherings, holidays, or warm-weather days.
Ingredients
For the Crust
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Cream Layer
- 1 cup heavy whipping cream
- 8 oz cream cheese, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
For the Pineapple Topping
- 1 can (20 oz) crushed pineapple, drained well
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
Instructions
Prepare the Crust
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of an 8×8-inch pan. Use the back of a spoon or the bottom of a measuring cup to pack it tightly.
- Place the pan in the refrigerator while you prepare the next layers.
Make the Cream Layer
- In a separate bowl, whip the heavy cream until stiff peaks form. Set aside.
- In another large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spread the cream layer evenly over the chilled graham cracker crust.
Prepare the Pineapple Topping
- In a small saucepan, combine the drained crushed pineapple, granulated sugar, and cornstarch.
- Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble. This usually takes about 5–7 minutes.
- Remove from heat and let the pineapple topping cool completely.
Assemble the Dessert
- Once the topping is cool, spread it evenly over the cream layer.
- Cover the pan and refrigerate for at least 3 hours, or until fully set.
Serve
- Cut into squares and serve chilled.
