Smother-Style Pork Chops

Smother-style pork chops are a Southern classic known for their tender texture and rich, flavorful gravy. The chops are first browned for extra flavor, then slowly cooked in a creamy onion gravy until they become melt-in-your-mouth soft. This comforting dish is perfect for family dinners or cozy evenings at home.

Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream or whole milk
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Optional: 1 tablespoon butter for extra richness

Instructions

  1. Begin by preparing the pork chops. Pat them dry with paper towels to remove excess moisture. This helps them brown better.
  2. Season both sides of each pork chop with salt, black pepper, garlic powder, and paprika. Rub the seasoning into the meat to ensure even coverage.
  3. Place a large skillet over medium-high heat and add the olive oil. Let the oil heat for about 1 minute.
  4. When the oil is hot, carefully place the pork chops into the skillet. Brown each side for 3 to 4 minutes until they develop a deep golden crust. Do not fully cook them at this stage; they will finish cooking in the gravy. Once browned, transfer the pork chops to a plate and set aside.
  5. In the same skillet, add the sliced onions. Reduce the heat to medium and cook for 5 to 7 minutes, stirring occasionally, until the onions become soft and lightly browned.
  6. Add the minced garlic to the onions and cook for 1 minute, stirring to prevent burning.
  7. Sprinkle the flour over the onions and garlic. Stir well to coat everything with the flour, and cook for 1 to 2 minutes. This step helps the gravy thicken and removes the raw flour taste.
  8. Slowly pour the chicken broth into the skillet while stirring constantly. This helps the flour blend smoothly without lumps.
  9. Add the heavy cream (or milk), thyme, and parsley. Stir well until the gravy becomes smooth and begins to thicken slightly.
  10. Return the browned pork chops to the skillet, placing them into the gravy. Spoon a little gravy over the top of each chop.
  11. Reduce the heat to low, cover the skillet with a lid, and simmer for 25 to 30 minutes. During this time, the pork chops will become tender and the gravy will thicken.
  12. If you want a richer gravy, stir in the optional tablespoon of butter during the last few minutes of cooking.
  13. Once the pork chops are tender, remove from heat and let them sit for a few minutes to allow the flavors to settle.
  14. Serve the smothered pork chops with mashed potatoes, rice, or vegetables, along with plenty of the creamy onion gravy on top.
