These low-carb Amish onion fritters bring you the classic flavor of Amish comfort food without the extra carbs. They are crispy on the outside, soft inside, and full of onion flavor. - 1 large onion, finely diced
- 2 large eggs
- 1 cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1ā2 teaspoon black pepper
- 1ā4 cup heavy cream
- 2 tablespoons water (optional, to adjust batter)
- Oil for frying (olive oil or avocado oil)
Instructions
- Start by preparing the onion. Peel the onion, cut it in half, and finely dice it into small pieces. Place the diced onion in a medium bowl and set aside.
- In a separate mixing bowl, crack the eggs and whisk them until the yolks and whites are fully combined.
- Add the heavy cream to the eggs and whisk again until smooth.
- Add the almond flour, baking powder, garlic powder, onion powder, salt, and black pepper. Mix well until a thick, smooth batter forms. If the batter seems extremely thick, add 1 to 2 tablespoons of water and mix again.
- Pour the diced onions into the batter. Use a spatula or spoon to fold the onions into the mixture, making sure all the onion pieces are evenly coated.
- Place a large skillet on the stove over medium heat. Pour in just enough oil to lightly cover the bottom of the pan. Allow the oil to heat for 2 to 3 minutes.
