Easy Sausage Breakfast Muffins

These Easy Sausage Breakfast Muffins are the perfect grab-and-go breakfast — hearty, cheesy, and packed with flavor. They require just a few simple ingredients and come together in minutes. Great for meal prep, busy mornings, or a delicious snack any time of day!

Ingredients:

  • 1 pound breakfast sausage (mild or spicy)
  • 1 cup shredded cheddar cheese
  • 1 cup Bisquick (or any baking mix)
  • 4 large eggs
  • ½ cup milk
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • Optional add-ins: diced bell peppers, chopped green onions, jalapeños, or cooked bacon bits

Instructions:

1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with non-stick spray or line with muffin liners.

2. Cook the Sausage
In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into small crumbles. Drain excess grease and let it cool slightly.

3. Mix the Batter
In a large bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
Add the Bisquick and stir until just combined — the mixture will be slightly thick.
Stir in the cooked sausage and shredded cheddar cheese. Add optional ingredients if using.

4. Fill the Muffin Cups
Spoon the mixture evenly into the prepared muffin tin, filling each cup about ¾ full.

5. Bake
Bake for 20–25 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.

6. Cool and Serve
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm — they’re fluffy, savory, and perfectly cheesy!

Storage Tips:

  • Store leftovers in the fridge for up to 5 days.
  • Freeze for up to 2 months. Reheat in the microwave or oven.
