This 4-Ingredient Cheddar Potato Soup is the definition of simple comfort food—creamy, cozy, and full of cheesy potato goodness. Made with just four basic ingredients, it’s perfect for busy weeknights or when you want something warm and satisfying with minimal effort.
Ingredients
4 cups frozen hash brown potatoes (or diced potatoes)
2 cups chicken broth
1 cup heavy cream
1½ cups shredded cheddar cheese
Instructions
Cook the potatoes
In a medium pot, combine the frozen hash browns and chicken broth. Bring to a gentle boil over medium heat, then reduce to a simmer and cook for 10–12 minutes, until the potatoes are tender.
Add cream
Stir in the heavy cream and let the soup gently simmer for 3–4 minutes, stirring occasionally.
Melt in the cheese
Reduce heat to low and add the shredded cheddar cheese a handful at a time, stirring until completely melted and smooth.
Serve
Once hot and creamy, remove from heat and serve immediately.
✨ Tip: If you’d like extra flavor without adding many ingredients, top each bowl with cracked black pepper or extra shredded cheddar before serving.
